almond flour banana bread

with chocolate chips and a boost of moringa 

 
gluten free banana bread

GLUTEN FREE - DAIRY FREE

INGREDIENTS:

1 cup plus 3 tbsp finely ground almond flour

1/4 cup arrowroot powder

1 tablespoon moringa powder

1/4 cup white rice flour

1 teaspoon baking soda

1/2 teaspoon kosher salt

4 tablespoon maple syrup (prefer grade B)

2 large eggs

1/4 cup plus 2 tablespoons coconut oil, melted

1 teaspoon vanilla extract

3 ripe large bananas (375g)

3 tablespoons tahini

½ -3/4 cup dark chocolate chips

optional: 1/4 cup chopped walnuts

METHOD :

combine all dry ingredients, mix well. mash banana thoroughly. whisk egg. combine wet ingredients (coconut oil, banana, egg, vanilla, tahini) and mix thoroughly. add wet into dry ingredients and mix well. add chocolate chips. 

line bread molds with parchment paper (or butter the sides). pour batter and bake at 350 F for approximately 45 minutes or until inside is set and top has browned.
